pork meatballs with bok choy stir fry

Ingredients

Meatballs:

**1 ½ lb. ground pork

**2/3 cup chopped green onions

**3 cloves garlic, minced

1 ½ tbsp. soy sauce

**1 tsp. Fresh ginger, finely chopped

1 tbsp. olive oil

Bok Choy:

**1-2 heads of bok choy, chopped

**1 cup, slice green onions

**2 cloves garlic, minced

2 tsp. sesame oil

2 tbsp. soy sauce

1 tbsp. brown sugar

½ tsp cornstarch

Peanut Sauce:

¼ cup peanut butter

1 tsp. brown sugar

1 tbsp. soy sauce

4 tbsp. water

Directions

  1. Mix together all of meatball ingredients (excluding the olive oil) and roll into small bite size meatballs. Place them on a skillet with the olive oil. Cook over medium heat for about 2-3 minutes on each side. Once the meatballs are cooked through, remove from skillet and set aside.

  2. While the meatballs are cooling, make the peanut sauce. Simply whisk together the ingredients and set aside to serve with meal later.

  3. Once meatballs are done cooking, drain off the excess fat from the skilled but do not wipe (you want a small amount to cook the bok choy in). Add the bok choy stems to the skillet and sauté for about 4 minutes. Next add the leaves as well as the green onion and garlic and sauté for 2 more minutes. Add the meatballs back to the skillet.

  4. While the green are cooking, whisk together the cornstarch, soy sauce, and brown sugar in a bowl. Turn heat to medium-high and add sauce to skillet and let bubble until sauce is thickened. Remove from heat and serve with peanut sauce and rice if desired.
